Like a Sanbook (a traditional ship from Qatar), Huda has sailed to many places, from Doha where she was born, to her heritage back in Palestine, to Melbourne, where she is currently anchored. Wherever the wind takes her, she collects memories and moments from all the people she meets, shaping the woman she is today, confident and strong like the roots of her Palestinian olive trees. Her love for food began in her Teta’s kitchen, sitting cross legged on the floor, watching her Teta’s wrinkled hands kneading the dough, before laying it to rest, like a small child. For Huda, food is a way of communicating with others, a vessel that can transport you to many places, while still sitting at the same table. In her classes, you will travel to Ashkalon, tasting the recipes of her Teta and the fruits of her land, the Zeit, Zaatar, Zaytoon (the oil, the herb and the olives). Carried across generations, her cultural legacy lives on in her hands, the same warm hands waiting to welcome you to her class.
